Chef Knives
Chef knives are
known as one of the most versatile of the kitchen blades. They are usually
forged or stamped in lengths between 6 and 12 inches. They are made
using materials such as carbon steel, stainless steel, high carbon stainless
steel, ceramic and titanium.
Chef knives that are forged are usually considered to be of higher quality
than their stamped counterparts. Forged blades begin as a steel alloy
in powder form or as a piece of the metal that is superheated and pounded
into shape. Stamped blades are cut from rolled steel.
Chef knives are also known as French knives. Knives made in France tend
to be thinner. Eight inches is the most common size for a chef’s
knife.
